- 4 Bell Peppers
- 16oz of Spinach
- 4 eggs
- Preheat oven to 400 degrees
- Cut off the top of each pepper and remove seeds
- Place peppers on baking dish.
- Stuff peppers half full with spinach
- Crack one egg into each pepper on top of the spinach
- Bake for 15-20mins, or until your eggs are done the way you like them and enjoy!!
