Paleo Tomato Salsa Bowls



  • 4 medium ripe Roma tomatoes
  • 1/4 cup black olives, sliced
  • 1/4 cup onion, finely diced
  • 1/2 green bell pepper, seeded and chopped
  • 1/2 jalapeno, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp grapeseed oil
  • 2 tsp balsamic vinegar
  • Salt and pepper, to taste



Slice the tomatoes in half and scoop out the insides. In a small bowl, mix together the remaining ingredients. Stir well. Spoon the salsa mixture into the tomato cups. Serve chilled.
