100ml (1/2 cup) freshly squeezed orange juice
40g (1⁄4 cup) chia seeds
60g (2 1⁄4 oz) pomegranate seeds
Peel and stone the mango. Then, using a beaker and hand-held blender, blitz the mango into a smooth puree. Stir in the orange juice and chia seeds and leave in the fridge for 1 hour. Divide between 2 bowls or glasses and top with pomegranate seeds.
