This recipe is so simple yet so delicious, ready in under 30 minutes!
Ingredients (Single serving recipe)
1 bell pepper (top cut off and seeds removed)
1 chorizo sausage (chopped)
1 avocado (chopped)
3 – 4 sun-dried tomatoes
1 small red onion (finely chopped)
2 cloves garlic (ground)
2 tsp oregano
dash of lime juice
ground pepper to taste
Bake bell pepper in oven at 200ºC for 10-12 mins. Sauté chorizo for 4-5 mins with onion and garlic. Mix avocado with sun-dried tomatoes, oregano and lime juice. Fill bell pepper with chorizo and avocado mixture and add ground pepper to taste.
